Paella\, jam balaya\, risotto\, biryani—many cultures have a signature dish of rice\, s pices\, vegetables\, and meat or seafood. What makes the national dish of Spain unique and so popular around the world? Come find out!

In th is class\, you’ll help instructor Christina Bello prepare two traditional paellas: one featuring seasonal vegetables\, and one with fresh seafood an d a variety of meats. We’ll talk about why the shape of the rice and the s hape of the pan is important\, along with other tips and tricks\, and you’ ll learn how to customize paella to the seasons and your own tastes (inclu ding vegan options). At the end of the class\, we’ll sit down to a delicio us paella feast\, complete with Sangria! This class is also BYOB.

Chri stina Bello comes from a family with a long history with food—growing\, co oking\, eating\, and sharing. Cooking locally and seasonally has become bo th her passion and her daily bread\, while her adventurous appetite has ta ken her around the country and abroad to learn what local\, seasonal cooki ng tastes like elsewhere. When her passion escapes the bounds of her kitch en\, she can be found outside learning to grill something new\, at the far mers market doing a happy dance at the first sour cherry sighting\, tradin g homemade jams and tarts at a Ch icago Food Swap\, or tending to her baby tomatoes at PGP’s Vedgewater garden.
